In detail
A steel grinder in a salt mill corrodes, and a corroded burr grinds coarse and then not at all. Ceramic is inert, which is why it is the only sensible material for salt and why a good pepper mill can get away with steel but should not.
Both mills here use ceramic burrs with six defined settings from a coarse flake to a fine dust, adjusted at the top so you can change it mid-seasoning without turning the mill over. Beech bodies, two hundred millimetres, refilled from the top. Wipe the outside only — water in the mechanism is what seizes a mill.
The one limitation worth stating: no ceramic body survives a jump from freezer to hot oven, and this one is no exception. Everything here is oven-safe from cold and freezer-safe on its own; it is the transition between the two that cracks a glaze, and no vitrification prevents it.
