In detail
The difference between stoneware that lasts and stoneware that does not is water absorption. Fired to under half a percent, a body is effectively closed: it will not craze into a web of hairlines, will not take a stain from tomato or turmeric, and will not hold the smell of what was on it last week. Unvitrified earthenware, sold in the same shapes at the same price, does all three inside a year.
Twenty-seven centimetres with a wide, low rim that gives a plate its presence without stealing the food’s space. Set of four, stackable, dishwasher, microwave and oven safe to 200°C. Fired twice, and the foot is glazed and ground so it will not scratch the plate beneath it.
The one limitation worth stating: no ceramic body survives a jump from freezer to hot oven, and this one is no exception. Everything here is oven-safe from cold and freezer-safe on its own; it is the transition between the two that cracks a glaze, and no vitrification prevents it.
