In detail
Most stockpots are a thin stainless shell with an aluminium disc on the base. That is adequate for boiling water and poor for anything that sits and reduces, because the sides carry no heat and everything happens in a hot ring at the bottom.
This one is five-ply to the rim with a 2.6 mm core, so a stock holds a bare simmer across the whole body without the base scorching. Eight quarts covers a large batch of stock, a pasta boil for six or a small brine. Interior litre and quart marks stamped into the wall. Induction ready, oven-safe to 260°C, riveted handles sized for oven gloves.
What it will not do: non-stick work. Nothing in this course is coated, which means eggs and delicate fish want either cast iron with a mature seasoning or a pan we do not sell. We would rather say that than sell you a coating that has a three-year life and cannot be repaired.
