In detail
A saucier is a saucepan with the corner taken out. The curved base means a whisk reaches every part of the interior, which is why a custard, a roux or a risotto made in one does not develop the scorched ring that a square-shouldered pan produces at the join.
Three quarts, five-ply clad with a 2.6 mm core, fully bonded to the rim so the sides carry heat evenly and a reduction does not burn at the waterline. Flared lip that pours without running down the outside. Induction ready, oven-safe to 260°C, with a lid.
What it will not do: non-stick work. Nothing in this course is coated, which means eggs and delicate fish want either cast iron with a mature seasoning or a pan we do not sell. We would rather say that than sell you a coating that has a three-year life and cannot be repaired.
Why this one. We compared it against pans at half the price and twice, and the deciding number was the core: the thickness of the aluminium between the steel layers, which is the only thing that determines whether a pan recovers when cold food goes in. Almost nobody publishes it. Where we stock a pan with a thinner core we say so and price it accordingly.
