In detail
Twelve inches is the difference between searing four portions and stewing them. Crowding a pan drops the surface temperature below the point where browning happens, and everything releases its water and boils instead — which is the commonest reason home cooking tastes flat.
Same construction as the ten inch: five-ply fully clad with a 2.6 mm aluminium core, bonded to the rim rather than a disc on the base. Oven-safe to 260°C, induction ready, with a helper handle because a full twelve-inch pan is heavy at arm’s length. The interior is left unpolished, which looks less shiny and releases food better.
What it will not do: non-stick work. Nothing in this course is coated, which means eggs and delicate fish want either cast iron with a mature seasoning or a pan we do not sell. We would rather say that than sell you a coating that has a three-year life and cannot be repaired.
