In detail
A clad pan is described by its ply and by the thickness of its aluminium core, and the second number is the one that matters. Five-ply with a 2.6 mm core holds its temperature when a cold steak goes in and recovers in seconds rather than half a minute. Three-ply with a thin core does neither, and no finish, coating or brand name changes that.
Ten inches is the single most useful size in a domestic kitchen: two portions with room to move them. Fully clad to the rim rather than a disc bonded to the base, so the sides cook too and nothing scorches at the disc edge. Induction, gas, electric and oven-safe to 260°C. Riveted stainless handle that stays cool on a hob and does not on a grill.
What it will not do: non-stick work. Nothing in this course is coated, which means eggs and delicate fish want either cast iron with a mature seasoning or a pan we do not sell. We would rather say that than sell you a coating that has a three-year life and cannot be repaired.
