In detail
A single-mesh sieve is either too coarse for flour or too fine for stock. This one carries a 40-mesh outer and an 80-mesh inner: the coarse layer takes the load and the fine layer does the sifting, which stops the fine mesh distorting under a kilo of flour the way an unsupported one does.
Twenty centimetres across with a hook and a rest bar so it sits on a bowl or a pan without being held. Fully stainless including the frame, so nothing rusts where the mesh is crimped. Wash it straight after use — dried starch in an 80-mesh screen is effectively permanent.
What it is not: a substitute for the piece next to it in this course. We list what each thing does and where it stops, because a catalogue that only records strengths is one you cannot use to choose between two things.
