In detail

A trivet has one job and most fail it by being decorative. Three heavy bars give a hot pan a stable three-point rest that will not rock, and seven millimetres of lift is enough air to stop the heat reaching a laminate or an oiled worktop underneath. Cast iron rather than silicone because silicone deforms under a 250°C pan base and then holds a permanent dish.

Matte black, cast in one piece with no welds to fail, and heavy enough that pushing a pan across it moves the pan and not the trivet. It also works as a low rack in a roasting tin.

What it is not: a substitute for the piece next to it in this course. We list what each thing does and where it stops, because a catalogue that only records strengths is one you cannot use to choose between two things.
