In detail
The large board is the one that changes how a kitchen works: four hundred and sixty by three hundred and fifty millimetres is enough to break down a chicken, hold the trimmings and still have clear board to work on, which is the difference between one board and three bowls.
Fifty millimetres of end-grain hard maple, about six kilograms, with recessed handholds and a juice groove on one face only so the other stays flat for dough. Rubber feet lift it clear of a wet worktop. Hand wash and oil monthly; it can be resurfaced with a card scraper twice over its life, which realistically means decades.
What it is not: a substitute for the piece next to it in this course. We list what each thing does and where it stops, because a catalogue that only records strengths is one you cannot use to choose between two things.
Why this one.
