In detail

A peeler is a knife with a fixed depth stop, and it lives or dies on the same thing a knife does: the steel. This one uses Japanese stainless at 58 HRC, hard enough to stay biting through a winter of root vegetables rather than starting to slide after a month.

Paired with a 90 mm paring knife in the same steel and the same handle, because those two tools are used within a minute of each other more often than any other pair in a kitchen. Full tang on the paring knife, riveted handle, 0.9 mm blade stock. Hand wash and dry both.

What it is not: a substitute for the piece next to it in this course. We list what each thing does and where it stops, because a catalogue that only records strengths is one you cannot use to choose between two things.
