In detail
A stepped lid sits on three diameters, so two of them cover almost every pan in a domestic kitchen and there is no drawer full of orphan lids.
Tempered glass with a stainless rim and a vent, so a simmer does not lift them. The knob is steel and hollow, so it stays cooler than a solid one and is oven-safe to 200°C. Sizes are twenty, twenty-four and twenty-eight centimetres across the pair. Do not run a hot one under a cold tap — tempered glass takes that about ten times and then goes all at once.
What it will not do: non-stick work. Nothing in this course is coated, which means eggs and delicate fish want either cast iron with a mature seasoning or a pan we do not sell. We would rather say that than sell you a coating that has a three-year life and cannot be repaired.
