In detail
A plain stainless kettle on induction is a slow, noisy thing because the field only couples to a thin shell. A clad base with an aluminium layer spreads the field and boils two litres in a little over five minutes on a domestic induction hob.
Two litres, which is four large mugs and a bit. Wide flat base for stability, an insulated handle that folds back out of the steam path, and a whistle that unclips so the spout can actually be cleaned. Works on induction, gas, electric and ceramic. Descale monthly if your water is hard — scale in a stovetop kettle is what makes it take longer every month until nobody notices it has doubled.
What it will not do: non-stick work. Nothing in this course is coated, which means eggs and delicate fish want either cast iron with a mature seasoning or a pan we do not sell. We would rather say that than sell you a coating that has a three-year life and cannot be repaired.
