The three-piece clad set with the two pieces that complete a kitchen: the twelve-inch skillet, which is the difference between searing four portions and stewing them, and the five-and-a-half-quart enamelled Dutch oven for anything long, acidic or braised.
Between them these five cover essentially every domestic technique — sear, sauté, reduce, boil, braise and bake. Clad pieces are five-ply with a 2.6 mm core and oven-safe to 260°C; the Dutch oven is enamelled cast iron, oven-safe to 260°C with the lid. About $612 bought separately. Never heat the enamelled pot empty; that is what crazes enamel.
