In detail

A thousand grit sets the edge and six thousand polishes it, which is the whole domestic sharpening requirement. Below a thousand you are repairing damage; above six thousand you are polishing for its own sake.

A water stone rather than oil: it cuts faster, it is cleaner, and it can be flattened. That last point is the one nobody mentions — every stone dishes in the middle with use, and a hollow stone puts a rounded edge on a knife no matter how good the technique. A flattening plate is included and should be used every third or fourth session. Soak the stone ten minutes before starting.

What it will not take: a bone, a frozen edge, a glass board or a dishwasher. Every one of those chips or rolls a hard edge, and the harder the steel the less it forgives. Cut on wood, wash by hand, dry immediately.
