In detail

A paring knife is used more often than any other blade in a kitchen and is almost always the cheapest one in the block, which is backwards. Ninety millimetres of high-carbon stainless at 58 HRC takes a fine edge, holds it through a week of ordinary work and comes back with three passes on a steel.

Fifteen degrees per side rather than the twenty a Western knife usually carries, which is what lets it take skin off a shallot without pushing through the flesh. Full tang, riveted handle, 2.0 mm spine tapering to nothing at the tip. Hand wash and dry it — high-carbon stainless is stain-resistant, not stain-proof, and a dishwasher will dull the edge in one cycle.

What it will not take: a bone, a frozen edge, a glass board or a dishwasher. Every one of those chips or rolls a hard edge, and the harder the steel the less it forgives. Cut on wood, wash by hand, dry immediately.
