In detail

The interior is deliberately left unpolished. A polished bowl looks better and does not work — seeds skate across it instead of being caught and crushed. The rough surface is the grinding mechanism, and it is why a stone mortar breaks down a spice in seconds where a smooth ceramic one takes minutes.

One point seven kilograms of granite at eighteen centimetres, heavy enough to stay put under a real pounding action rather than needing a hand on it. Season it once by grinding raw rice until the flour comes out white, which takes about three passes and removes the loose grit. Rinse with water only — soap soaks into stone and comes back out in the next batch.

What it is not: a substitute for the piece next to it in this course. We list what each thing does and where it stops, because a catalogue that only records strengths is one you cannot use to choose between two things.
