About TBL Holdings
TBL Holdings is a kitchen and tabletop housewares supplier in Meridian, Idaho. We stock cookware, knives,
serveware and storage, and we publish the number that governs how each piece behaves on its own page.
The problem with this category
Kitchenware is sold on adjectives. Professional. Restaurant-grade. Heirloom. Chef-quality. None of those
words has a definition, none of them is verifiable, and a buyer comparing two pans at the same price has
nothing to go on except the photography.
The information exists. A clad pan is described by its ply and the thickness of its aluminium core. A knife
is described by its steel and its Rockwell hardness. A ceramic body is described by its water absorption. A
storage container is described by its temperature range and whether its gasket comes out. All of that is
measurable, most of it is known to the manufacturer, and almost none of it makes it onto a product page.
What we do instead
Every page here carries the material and the governing number in a table, above the description. Five-ply
with a 2.6 mm core. Sixty HRC at fifteen degrees per side. Water absorption under half a percent.
Minus forty to a hundred and twenty degrees. Where a piece has a limitation, the page says so — a
stoneware line that is dishwasher-safe but not microwave-safe, a pan with a thinner core priced accordingly, a
knife whose thinner edge is less forgiving of a bone.
Some of that makes a piece look worse than the copy on a competitor’s page. That is the point. A
catalogue that only records what a thing is good at is one you cannot use to choose between two things.
What we are not
We do not manufacture, and we are not going to invent a workshop. We choose, and then publish the basis on
which we chose. Nothing we sell is certified for a commercial kitchen inspection regime; this is domestic
housewares, bought once and kept.
How the catalogue is arranged
By what a piece does at the table rather than by what it is: prep, heat, cut, serve, store. A person buying
a pan is not shopping for “cookware”, they are trying to get dinner browned rather than stewed, and
the courses are arranged the way the problem arrives.
